Cold Nights

When it's too cold for the guys to go and play hockey, you know it's cold. So I thought some comfort food was in order.

Pennette al Pomodoro

Put 5 liters of water and a handful of coarse salt on to boil. Cut one red onion in fine slices and saute in olive oil while you peel and chop three cloves of garlic. Add the garlic, one or more chopped fresh tomatoes, and a bottle of passata. Add a good sprinkling of dried oregano, cover and let simmer.

While the water is getting to the boil, prepare the rest of the meal. When the water is boiling, add the past and cook until just don. Drain and serve with the sauce. This pasta is nice with spicy oil and grated parmigiano. Lastnight we had it with steamed broccoli and apple crumble for dessert.
